Ground beef — 79 burger recipes

meat · 79 recipes

Ground beef is the default answer in 59 recipes, and the fat percentage matters more than the cut. Most builds here call for 80/20 — twenty percent fat — because leaner mince dries out before the middle is cooked and fattier mince shrinks away to nothing. Chuck is the usual source. The one rule that runs through every beef recipe on the site is not to work the meat: pressing, kneading or over-mixing turns the texture rubbery, so patties get shaped with as few movements as possible and seasoned on the surface.
