This is the burger that ends Bob's relationship with his father, who takes one look at it and drops it in the trash in front of a full dining room. It deserved better. Feta goes inside the patty rather than on it, sealed between two thin layers of beef so it melts into a pocket instead of running out onto the pan.
The wheels are the reason it has a name. Battered pickle chips get pinned to the sides on long toothpicks, two per burger, which turns the whole thing into a car and makes it almost impossible to eat without taking it apart first. Dry the pickles properly or the coating slides off in the oil and you are left with a burger on bare sticks.

- Feta1/2 cup feta, crumbled
- Burger bun4 buns

- Sour cream1/2 cup sour cream
- Yellow mustard2 tbsp mustard
- Chives1/2 cup chives, finely chopped

- Dill pickle1 jar dill pickle chips, cut thick
- All-purpose flour1/2 cup flour
- Egg1 egg
- Black pepperBlack pepper

Recipe
- 1Mix the sour cream, mustard and chives. Set the sauce aside.
- 2Pat the pickle chips completely dry with paper towel. Skip this and the coating slides off in the oil.
- 3Season the flour with black pepper, garlic powder, paprika and cayenne. Beat the egg in a second bowl.
- 4Dredge each pickle in flour, then egg, then flour again. Fry at 350°F for about 2 minutes until golden, and drain them on a rack rather than on paper.
- 5Shape a thin 3 oz patty, crumble feta into the centre, cover with a second thin patty and seal the edges tightly so the cheese cannot escape.
- 6Cook the patties as you would any burger. Toast the buns in butter.
- 7Build it: bottom bun, patty, and a generous layer of sauce on the top bun.
- 8Push two long toothpicks through the burger crosswise and slide a fried pickle onto each end. Four wheels. Shoot it from the side.
