Vegetable oil — 42 burger recipes

pantry · 42 recipes

Neutral oil appears in 36 recipes, usually for one of two jobs. Shallow in a hot pan it is what makes contact between meat and metal complete, which is where the crust on a smash burger comes from. Deep in a pot, it is the entire cooking method for fried chicken sandwiches, and the recipes here that fry specify a temperature because oil that is too cool soaks into the coating instead of sealing it. Neutral matters: olive oil smokes and turns acrid well below the temperatures these recipes need.
