Hot Chicken Sandwich

    Black Tap’s nod to Nashville hot chicken: crispy chicken brushed with hot chili oil and a spicy dry rub, with kosher pickles, the house buttermilk dill dressing and parsley. The dill dressing is the cooling element and the pickles cut the oil. Properly hot by burger-bar standards.

    The story

    Nashville hot chicken has an origin story the Prince family still tells. Thornton Prince, the story goes, came home late once too often, and his girlfriend served him fried chicken loaded with extra pepper as revenge. He liked it, and by the mid-1930s he and his brothers were selling their own version at the BBQ Chicken Shack in Nashville; his great-niece André Prince Jeffries has run Prince’s Hot Chicken Shack since 1980. The dish stayed a local African American speciality for decades until KFC took Nashville Hot Chicken national in January 2016.

    Chris Barish, son of the Planet Hollywood founder, opened Black Tap in 2015 as a tiny 15-seat burger and craft beer bar in New York. It became famous almost overnight for something other than burgers: the CrazyShake, a towering milkshake loaded with cake, sweets and candy floss that turned the queue outside into a fixture of Instagram.
