The Veg Zinger is KFC’s vegetarian version of its best-known spicy burger, sold on some international menus. The chicken fillet is replaced by a crisp, spiced vegetable patty, and the rest stays close to the original: lettuce, tomato and mayo in a sesame bun.

This home version makes the patty from finely chopped mixed vegetables such as carrot, peas and beans, bound with mashed potato, breadcrumbs and cornflour and seasoned with chili powder, paprika and black pepper. Chop the vegetables small and make sure the potato is not wet, or the patties will not hold together. They fry over medium heat for three to four minutes a side until golden and crisp. The heat that makes it a Zinger comes from both places: the spiced patty and a spicy mayo of mayonnaise, hot sauce and paprika. Assemble and serve at once, while the crust is still crunchy.

Mixed vegetables1 cup (150g) mixed vegetables, finely chopped (carrot, peas, beans)
Potato1/2 cup (60g) mashed potato
Breadcrumbs1/4 cup (30g) breadcrumbs
Chili powder1/2 tsp chili powder

Mayonnaise1/2 cup (120ml) mayonnaise
Hot sauce1 tsp hot sauce
Paprika1/2 tsp paprika
Saltpinch salt

Burger bun2 sesame burger buns, toasted
Iceberg lettuce1/2 cup (20g) shredded iceberg lettuce
Tomato2 tomato slices
Vegetable oilvegetable oil, for frying

Recipe

Prepare the veg patty. In a bowl, mix chopped vegetables, mashed potato, breadcrumbs, chili powder, paprika, black pepper, salt, and cornflour until well combined. Form into two burger-sized patties.

Fry the patties. Heat vegetable oil in a skillet over medium heat. Fry the patties for about 3–4 minutes per side until golden brown and crispy. Drain on paper towels.

Make the spicy mayo. In a small bowl whisk together mayonnaise, hot sauce, paprika, and a pinch of salt until smooth and creamy.

Toast the buns lightly in a skillet or griddle until warm and slightly golden.

Assemble the burger: bottom bun with a spoonful of spicy mayo, crispy veg patty, shredded lettuce, tomato slices, another light spread of mayo, then top bun. Serve immediately while the patty is hot and crispy.
