All-purpose flour — 32 burger recipes

pantry · 32 recipes

Plain flour is in 27 recipes and is mostly about fried chicken. It is the first and last layer of a dredge, and the way it is handled decides whether the coating is smooth or craggy: flour tossed with a few spoons of the wet marinade forms shaggy clumps that fry into the ridged crust people associate with the Zinger and its copycats. Flour also thickens gravies and sauces here, and it is what stops a wet bean patty from falling apart in the pan.
