This one is a copycat: the restaurant original taken apart and rebuilt with ingredients you can actually buy. Stripped back, it is ola oil, skinless cod fillets, kosher salt and arge egg. Worth reading twice before you start: gently add 2 fillets to hot oil; fry, gently stirring and flipping fillets in oil occasionally, until golden brown and crispy, 3 to 5 minutes. It scored 8.2 out of 10 here, and readers have voted on it 3 times since. The full method runs to 5 steps below, with the ingredient list above it. Everything is measured for a normal home kitchen rather than a restaurant line.
