Ingredients
- Chicken breast1 large chicken breast (approx. 7 oz / 200g)
- Cheddar2 slices white cheddar or pepper jack cheese
- Pepper Jack cheese2 slices white cheddar or pepper jack cheese
- Bacon3 strips bacon
- Crispy fried onions1/4 cup (15g) crispy fried onions
- Iceberg lettuce1/2 cup (30g) shredded iceberg lettuce
- Sesame seed bun1 square sesame seed bun

- Mayonnaise4 Tablespoons (60ml) mayonnaise
- White onion1 teaspoon (5g) finely minced white onion
- Crispy fried onions1 teaspoon (5g) crispy fried onions (crushed)
- Garlic powder1/2 teaspoon garlic powder
- Onion powder1/2 teaspoon onion powder
- Black pepper1/4 teaspoon black pepper

- All-purpose flour1/2 cup (60g) all-purpose flour
- Egg1 egg
- Water2 Tablespoons (30ml) water
- Salt1/2 teaspoon salt
- Paprika1/2 teaspoon paprika
- Garlic powder1/4 teaspoon garlic powder

- 1First, whip up the signature CBO sauce so the flavors can marry. In a small bowl, combine the mayo, minced white onion, crushed crispy onions, garlic powder, onion powder, and black pepper. Stir it well and let it chill in the fridge. This sauce is what gives the burger its savory, oniony punch.
- 2Prepare the chicken patty. Slice the chicken breast into a rectangular shape to fit your square bun. For the breading, set up two bowls: one with the flour and spices (salt, paprika, garlic powder), and another with the egg beaten with water. Dip the chicken into the flour, then the egg wash, then back into the flour for a thick, crunchy coating.
- 3Get the bacon crispy. Fry the bacon strips in a pan over medium heat until they're golden and stiff. Remove them and set them aside on a paper towel. Keep the bacon fat in the pan for extra flavor if you like, or wipe it out for a cleaner fry.
- 4Deep fry or shallow fry your breaded chicken patty at 350°F (175°C) for about 5-6 minutes per side until it's deep golden brown and the internal temperature reaches 165°F (74°C). While the chicken is hot, place the cheese slices on top so they start to melt.
- 5Toast your square bun until the edges are slightly crispy. Spread a generous amount of the CBO sauce on both the top and bottom bun. This burger is all about the layers, so don't be shy with the sauce.
- 6Assemble the CBO: On the bottom bun, place the cheesy chicken patty. Add the crispy bacon strips. On the top bun side, pile on the shredded lettuce and a heavy sprinkle of crispy fried onions. Flip the top onto the bottom and enjoy your homemade masterpiece.
