This one only ever exists as a line on the chalkboard, so everything here except the mole itself is reconstruction. Mole is a Mexican sauce built on chocolate, chili and sesame with a long list of spices behind it, and what it does to a plain cheeseburger is worth the trouble: bittersweet, smoky, and darker in flavour than anything else on this list.
Buy the paste rather than building the sauce from scratch unless you have an afternoon spare. Loosen it against the base of the pan with hot broth before it goes anywhere near real heat, and stir the whole time it warms. Mole scorches in seconds and there is no rescuing it once it does.

- White melting cheese4 slices white melting cheese
- White onion1 onion

- Mole paste3 tbsp mole paste
- Chicken stock1/2 cup chicken broth, hot
Recipe
- 1Put the mole paste in a small pan. Add two spoons of hot broth and work it against the base of the pan until smooth, then thin it with the rest of the broth to the consistency of sour cream.
- 2Warm it through for 5 minutes over low heat, stirring the whole time. Mole scorches in seconds.
- 3Slice the onion into rings and fry until golden with black pepper and smoked paprika.
- 4Halve the brioche and toast it in butter.
- 5Cook the patties, two slices of cheese on each, lid on to melt.
- 6Build it: a little mole on the bottom bun, the patty with its cheese, a generous layer of mole on top, then the fried onions and the top bun.
