Inspired by Walter White's obsession with precision, The Heisenberg Burger is built like a scientific experiment. A smoked beef patty, sharp burger sauce, caramelized onions, fresh vegetables, and a signature blue isomalt crystal infused with lime and chili create a burger that's methodical, precise, and surprisingly balanced. The finished burger should look clean and deliberate. The blue crystal should sit on top like a piece of lab-grown glass, while the smoked beef, melted cheese, and caramelized onions create a rich contrast underneath. Recipe
- 1Start with the blue crystal. Melt the isomalt in a small saucepan over medium heat until completely clear, about 170C / 340F. Stir in the blue food coloring, lime zest and chili powder. Pour onto parchment paper and let it cool completely until hard. Break it into crystal-shaped shards and set aside.

- 2Mix the sauce so the flavors have time to come together. Combine mayonnaise, ketchup, finely chopped dill pickles, smoked paprika, dried onion, garlic powder and Tabasco. Stir until smooth and refrigerate.

- 3Divide the 500g beef into 2 equal balls, about 250g each. Keep them loose and don't compress the meat. Season with salt and black pepper immediately before cooking.
- 4Heat a cast iron skillet over high heat until lightly smoking, about 200C / 390F surface temperature. Place a beef ball onto the skillet and immediately smash it to about 1 cm thick. Cook for 2 to 3 minutes without touching it until a dark brown crust forms across the entire surface.
- 5Flip the patty and immediately place 2 slices of American cheese on top. Cook for another 60 to 90 seconds until the cheese is fully melted and the internal temperature reaches 71C / 160F. Repeat with the second patty.
- 6While the burgers cook, melt butter in a separate skillet over medium heat. Add the sliced onion and cook for 12 to 15 minutes, stirring occasionally, until deeply golden and caramelized. The onions should be sweet and soft with no burnt spots.
- 7Place the finished patties under a smoking dome with mesquite wood chips. Trap the smoke for 1 minute. The smoke should stay cool enough that it perfumes the fat without continuing to cook the burger.

- 8Toast the brioche buns cut-side down over medium heat for about 60 seconds until golden brown. Spread sauce on the bottom bun, then add lettuce and tomato. These create a moisture barrier that helps keep the bun from getting soggy.

- 9Place the smoked cheeseburger patty on top of the vegetables. Add a generous pile of caramelized onions and carefully place one blue isomalt crystal shard on top of the hot meat.

- 10Close with the top bun and serve immediately. As the crystal warms from the burger, the lime and chili aroma starts releasing into the smoke, cheese and beef underneath.
