This is the only burger in history to send a grown man to a motivational coach. Peter orders a triple bacon burger, gets short-changed on the bacon, says nothing, and drives away humiliated.
So this one does not hold back: twelve strips in the pan, counted out on camera, and none of the fat wasted. The rendered fat goes straight into mayonnaise with ketchup, lime juice and pepper, which sounds like too much and turns out to be the reason it works — the lime is the only thing cutting through all that fat, and without it the sauce would be unreadable. Bacon and bacon sauce on the same burger. Nine point one, and I finally understand why Peter took it so badly.

- Ground beef150 g ground beef (80/20)
- Bacon12 strips bacon
- American cheese1 slice American cheese
- Burger bun1 burger bun
- Mayonnaise4 tbsp mayonnaise
- Bacon2 tbsp hot bacon fat, from the pan
- Ketchup1 tbsp ketchup
- LimeJuice of half a lime
- Iceberg lettuceIceberg lettuce
- Black pepperBlack pepper
- SaltSalt
Recipe
- 1Fry all twelve strips of bacon until crisp and pour the rendered fat into a bowl. You need it for the sauce, so do not tip it away.
- 2Make the sauce while the fat is still hot: whisk it into the mayonnaise, then add the ketchup, lime juice and plenty of black pepper.
- 3Shape and season the patty and cook it on a hot pan, laying the cheese on at the end.
- 4Toast the bun and put the lettuce on the bottom half.
- 5Patty with the melted cheese on the lettuce.
- 6Pile all twelve bacon strips on top, folded rather than flat so they stay put.
- 7Pour the bacon-fat sauce over the whole thing and close it.
