The burger that wins the contest. Skip names it on screen as a pomegranate and green chili chutney burger made with his grandmother's spice blend, lets saffron slip by accident, and then threatens to kill anyone who repeats it. The rest of the blend here is reconstruction, based on where that particular combination comes from.
The chutney needs to reduce until it drags behind the spoon and then cool completely, and both halves of that matter. Warm chutney soaks straight through the bun before the burger reaches the table. Saffron goes in twice, half into the reduction and half into the mayonnaise, which is what carries it through to the first bite.

    Rub the saffron threads between your fingers, cover them with a tablespoon of hot water and leave for 15 minutes.

    Crush the coriander seed under the flat of a knife. Toast it in a dry pan for 20 seconds, then add the cumin and cardamom for 5 seconds more.

    Add oil, then the finely chopped onion, serranos and grated ginger. Cook 5 minutes.

    Pour in the pomegranate juice, sugar and vinegar. Reduce for 15 minutes until it drags behind the spoon, adding half the saffron infusion at the halfway point.

    Off the heat, stir in the pomegranate seeds and cinnamon. Cool it completely or it will soak straight through the bun.

    Mix the remaining saffron infusion into the mayonnaise.

    Cook the patties, white cheese on top, lid on.

    Build it: saffron mayonnaise, iceberg, patty with cheese, chutney on top.
