A basic burger in the family-cookout style: ground beef bound with an egg and fine dry bread crumbs and seasoned with nothing more than salt and pepper.
The small trick is the order. The egg is whisked with the salt and pepper first, so the seasoning is spread evenly before the meat goes in, and then the beef and crumbs are mixed until just blended. The crumbs help the patties hold together and stay tender, at the cost of a slightly softer bite than an all-beef patty. A pound of beef makes four patties three quarters of an inch thick. They cook on a hot, covered grill for six to eight minutes a side, and the lid helps thick patties heat through before the outside burns. At 160°F in the centre they are ready for whatever toppings you like.
