The story
The counter is the whole idea, and it has been since 1959. At Harvey’s you order a flame-grilled patty and then walk it along a line, pointing at what you want put on it — grilled onions, hot peppers, pickles, tomato, as much or as little as you like. In an industry that spent the following decades removing decisions from the customer to save seconds, a Canadian chain kept the slowest part of the process because it was the part people liked.

About Harvey's
Harvey’s opened in Richmond Hill, Ontario, on 1 April 1959. The name came from a sign: one of the founders spotted the sign of a closed car dealership called John Harvey Motors in Toronto and reused it for the restaurant. It has been a Canadian fixture ever since, now part of the country’s largest restaurant group.
