About
Air fryers are good at many things, but browning a burger is not the obvious one. This recipe gets around it with a brush of melted butter whisked with beef base, a concentrated paste sold in jars, which seasons the outside and helps it colour in the dry heat.
Nothing goes into the meat itself. A pound of 80/20 beef makes four patties about three quarters of an inch thick and a little wider than the buns, because they shrink as the fat renders. At 400°F they need seven minutes, flipped halfway, for medium, and two minutes more for well done. The beef base is salty, so the only other seasoning is black pepper. Cook in batches if the basket is small: crowded patties steam instead of browning.
Ingredients
0 / 4
- Ground beef1 pound 80% lean ground beef
- Butter2 tablespoons melted butter
- Ground beef1 tablespoon beef base (such as Better than Bouillon®)
- Black pepperfreshly ground black pepper to taste
Recipe
- 1Preheat an air fryer to 400 degrees F (195 degrees C).
- 2Form beef into 4 patties, approximately 3/4 inches thick and 4 1/2 inches in diameter. Make the patties slightly bigger than the buns to allow for shrinkage.
- 3Whisk together warm melted butter and beef soup base in a small bowl. Brush lightly onto both sides of patties and season with pepper. Set patties into the air fryer basket. Depending on the size of your air fryer, you may need to cook them in batches.
- 4Air-fry patties for 7 minutes, flipping halfway through, for medium doneness. For well done, air-fry for an additional 2 minutes.
