Yes, this is real crocodile. Ground crocodile is very lean, and the texture is closer to chicken breast than to beef, so the first thing to know is that it’s a bit dry on its own. Most of this burger is there to deal with that.
The patty gets shaped into a little gator, snout, tail and legs tucked in, and seared with Monterey Jack melting on top under a lid. The real work is the sauce: fresh mango mashed right in the bowl with mayo, lime, Worcestershire, cayenne, garlic and oregano. The mango and the lime bring back what the meat is missing, which is why the sauce goes on both sides of the patty. Alfalfa sprouts stand in for lettuce. It scored 8.8, one of the best in the video.

Ingredients

  • 150 g ground crocodile meat
  • 1 slice Monterey Jack
  • 1 burger bun
  • 1 tbsp butter
  • A handful of alfalfa sprouts
  • Half a fresh mango
  • 2 tbsp mayonnaise
  • 1 tsp lime juice
  • 1/2 tsp Worcestershire sauce
  • A pinch of cayenne
  • 1 small garlic clove, minced
  • A pinch of black pepper
  • A pinch of dried oregano

    Sear the patty on a hot pan. Lay the Monterey Jack on top and cover with a lid until the cheese melts.

    For the sauce, chop the mango and mash it right in the bowl. Mix in the mayo, lime juice, Worcestershire sauce, cayenne, garlic, black pepper and oregano.

    Toast the bun in butter.

    Crocodile is a bit dry on its own, so don’t go light on the sauce. The mango and the lime are what fix it.
