This version takes everything from a Big Mac and turns it into a hot dog format, with a juicy beef “sausage” stuffed with melted cheese inside. It’s cleaner to eat, perfectly balanced, and somehow even better because the cheese is hidden right in the meat. You get a juicy beef sausage with melted cheese flowing inside, wrapped in a soft bun with fresh toppings and sauce. It should be tight and easy to hold. When you bite in, the cheese should be hot and slightly gooey inside the meat. Serve immediately. It scored 9.3 out of 10 here, and readers have voted on it 3 times since. The full method runs to 8 steps below. Read the whole thing once before you start: a couple of the steps overlap and it saves a burnt batch.

Recipe

  1. 1
Start with the sauce so it has time to develop flavor. Mix mayo, mustard, vinegar, pickle juice, chopped pickles, garlic, and paprika until smooth and slightly orange. No ketchup, the color comes from paprika.
  2. 2
Divide the beef into 2 portions. Flatten each portion in your hand, place about 2 to 3 slices of cheese in the center, then wrap the meat tightly around it to form a sausage shape. Seal it well so the cheese doesn’t leak out.
Step 2: Divide the beef into 2 portions. Flatten each
  3. 3
Heat a pan over medium heat with a little oil. Place the beef sausages in and cook for about 8–10 minutes, turning occasionally, until browned on all sides and fully cooked through.
  4. 4
Watch carefully while cooking. If the heat is too high, the outside burns before the inside cooks and the cheese can burst out. Keep it controlled so it stays juicy.
  5. 5
Slice the hot dog buns and toast them cut-side down in the same pan over medium heat for 60–90 seconds until lightly golden.
Step 5: Slice the hot dog buns and toast them
  6. 6
Spread sauce on both sides of the bun. Add shredded lettuce, diced onion, and pickles.
  7. 7
Place the hot beef sausage inside the bun. Add a bit more sauce on top if you want extra moisture.
Step 7: Place the hot beef sausage inside the bun.
  8. 8
Close gently and serve immediately while the cheese inside is still melted and flowing.
Step 8: Close gently and serve immediately while the cheese
