These are stuffed burgers: two thin patties sealed around a filling of crisp bacon, soft onion and Cheddar, so every bite has the toppings inside rather than on top.
The beef is seasoned with barbecue sauce, garlic powder, pepper and salt and pressed into twelve thin quarter-pound patties, which chill while the filling is made. The bacon is cut small and fried until crisp, then the onion is softened in the fat left in the pan and mixed with it. Six of the patties get a spoonful of the bacon and onion mixture and a scatter of shredded Cheddar, then the other six go on top and the edges are pinched firmly closed; any gap and the cheese escapes on the grill. They cook over medium heat for four to five minutes a side, to 160°F in the middle. Three pounds of beef make six large burgers.

Recipe

  1. 1
In a large bowl, work the ground beef together with the barbecue sauce, garlic powder, black pepper and salt by hand. Take about 1/4 pound at a time and press it into a thin patty until you have 12. Lay them on a cookie sheet, cover with plastic wrap and chill them while you make the filling.
  2. 2
Cook the bacon in a large skillet over medium-high heat, turning it now and then, for about 5 minutes, until browned all over. Lift it out with a slotted spoon onto paper towels. Turn the heat down to medium and soften the onions in the fat left in the pan until they just start to colour, then combine the onions and bacon in a small bowl.
  3. 3
Heat an outdoor grill to medium and oil the grate lightly.
  4. 4
Take the patties out of the fridge. Spoon 1 1/2 tablespoons of the bacon and onion filling onto 6 of them and scatter shredded cheese on top. Cover each with one of the plain patties and pinch the edges firmly so the filling cannot escape.
  5. 5
Grill the stuffed burgers for 4 to 5 minutes per side, until the beef has no pink left in the centre and a thermometer reads at least 160 degrees F (70 degrees C). Serve in hamburger buns with whatever condiments you like.
