This viral burger is all about that insane bacon-wrapped spiral patty. Instead of a regular burger, you roll beef into a bacon strip and bake it into a juicy, smoky “snail” that stays ridiculously tender inside. Add buttery caramelized onions, melted cheddar, crispy onions, and a punchy sauce, and it turns into a heavy, messy, next-level burger. FOR THE BACON SPIRAL PATTY: • 1 lb (500g) ground beef, 80/20 • 1 tsp salt • 1/2 tsp black pepper • 1/2 tsp paprika • 6–8 long strips bacon FOR THE BUTTERY ONIONS: • 1 large white onion, finely chopped • 3 tbsp butter • pinch of salt FOR THE SAUCE: • 2 tbsp mayo • 1 tbsp ketchup • 1 tsp sriracha • 1 tsp yellow mustard • 1/2 tsp paprika • 1/4 tsp black pepper FOR THE TOPPING: • 1/2 cup crispy fried onions FOR ASSEMBLY: • 2 brioche buns • 2 slices cheddar cheese SERVING: You get a thick spiral patty with visible layers of beef and bacon, juicy in the center with crispy edges. The onions should be soft and buttery, almost melting into the bun. Cut it in half so the spiral shows. Serve hot, this one gets messy fast.

    Start with the spiral patty. Lay bacon strips slightly overlapping to form one long strip. Spread the ground beef evenly on top in a thin layer, about 1 cm thick. Season with salt, black pepper, and paprika.

    Carefully roll it into a tight spiral, like a cinnamon roll. Keep it compact so it doesn’t fall apart while cooking. Place it seam-side down on a tray.

    Bake in a preheated oven at 190C / 375F for 20–25 minutes until the bacon is cooked and the beef is fully done. If you want more color, broil for 2–3 minutes at the end until the bacon crisps up.

    As soon as it comes out, place cheddar slices on top so they melt from the residual heat. If needed, return to the oven for 1 minute to fully melt the cheese.

    While the patty cooks, make the onions. Medium heat, melt butter in a pan, add chopped onion and a pinch of salt. Cook 10–15 minutes, stirring, until soft, golden, and slightly caramelized. Don’t rush, they need time.

    Push the onions to one side of the pan and place the buns cut-side down into the butter. Toast for 60–90 seconds until golden and soaked with that onion butter.

    Mix the sauce. Combine mayo, ketchup, sriracha, mustard, paprika, and black pepper until smooth and slightly thick.

    Assemble. Bottom bun, a thick layer of buttery onions, the bacon spiral patty with melted cheddar, a handful of crispy fried onions, generous sauce, top bun. Press lightly so it holds together.
