
The Paleo
A double without the bun: two Angus patties wrapped in lettuce with bacon, avocado, tomato, pickles, onions and mustard. MOOYAH calls the lettuce wrap an Iceburger. It holds together better than most lettuce-wrapped burgers because the avocado and mustard glue things in place. A good order if you want the beef and none of the bread.

About MOOYAH Burgers, Fries & Shakes
Rich Hicks and Todd Istre opened the first MOOYAH in Plano, Texas, in 2007, part of the wave of “better burger” chains of the late 2000s. The name, the company says, is how a cow would shout “Booyah!”, and the whole brand talks in that tone. The first restaurant abroad opened in Dubai in 2013 as the chain’s fiftieth, and the hundredth opened in Tuscaloosa, Alabama, in 2016. In 2017 the founders sold to two private equity firms, Gala Capital Partners and Balmoral Funds.
Around a hundred restaurants in the United States and Canada, plus franchises in the Gulf states.
