The standard mushroom Swiss, with one twist: fried onion strings on top of the sautéed mushrooms and Swiss, plus mayo on the potato bun. The onions add the crunch that a mushroom burger usually lacks. It is richer than it looks, close to 800 calories for a single patty, mostly because of the mayo and the frying.

Rich Hicks and Todd Istre opened the first MOOYAH in Plano, Texas, in 2007, part of the wave of “better burger” chains of the late 2000s. The name, the company says, is how a cow would shout “Booyah!”, and the whole brand talks in that tone. The first restaurant abroad opened in Dubai in 2013 as the chain’s fiftieth, and the hundredth opened in Tuscaloosa, Alabama, in 2016. In 2017 the founders sold to two private equity firms, Gala Capital Partners and Balmoral Funds.

Around a hundred restaurants in the United States and Canada, plus franchises in the Gulf states.
