
The Double Diablo
The spicy one from the Hall of ‘Dang!’: two Angus patties, pepper jack, bacon, jalapeños, Cholula and mayo. The heat is real but friendly, since Cholula is a mild sauce and the mayo softens it. Well over a thousand calories, so treat it as the whole meal. For the same idea in a smaller size, the Gluten-Free burger uses a single patty with nearly the same toppings.
The story
Cholula takes its name from Cholula in Puebla, often described as the oldest continuously inhabited city in Mexico. The sauce itself was made by the Harrison family in Chapala, Jalisco, for three generations, and was used mostly in sangrita, the spicy chaser served with tequila. It reached the United States through Austin, Texas, in 1989 and spread through Southwestern supermarkets in the 1990s, recognisable by its round wooden cap. At 1,000 to 2,000 Scoville units it is mild by hot-sauce standards. McCormick bought the brand in 2020.

Rich Hicks and Todd Istre opened the first MOOYAH in Plano, Texas, in 2007, part of the wave of “better burger” chains of the late 2000s. The name, the company says, is how a cow would shout “Booyah!”, and the whole brand talks in that tone. The first restaurant abroad opened in Dubai in 2013 as the chain’s fiftieth, and the hundredth opened in Tuscaloosa, Alabama, in 2016. In 2017 the founders sold to two private equity firms, Gala Capital Partners and Balmoral Funds.
Around a hundred restaurants in the United States and Canada, plus franchises in the Gulf states.
