Goiko’s three-breed burger: a 200 g patty blended from wagyu, ox and Angus, with melted raclette, caramelised roasted pepper, a beef mayonnaise, green shoots and a brioche bun. The blend is the point, rich and beefy without the greasiness of pure wagyu, and the raclette adds a nutty, Alpine flavour. One of the chain’s pricier burgers, and a good one to try first if you care about the meat.
