Kevin Bacon

  • Signature

The burger Goiko is famous for, and a pun that works on the plate. The bacon is not laid on top: it is chopped into bits and mixed through the beef on the grill, so every bite is smoky, then finished with crunchy onions and melted American cheese. It is rich, salty and exactly as addictive as the chain’s sales counter suggests.

The story

Spain came late to the burger and then went at it hard. Madrid’s boom started in the 2010s, and Goiko opened into it in 2013 with a menu of film-star puns and burgers too big to eat neatly. The Kevin Bacon is the joke that turned into the bestseller, and the trick behind it is real: the bacon is chopped into the beef on the grill rather than laid on top, so the smoke and salt end up through the patty instead of in one layer.

About Goiko

  • Since 2013
  • $$

Goiko started in Madrid in 2013, when Venezuelan-born Andoni Goicoechea opened a small burger restaurant built around the kind of messy, heavily loaded burgers he loved. It caught on almost immediately, spread across Spain, and became one of the country’s most recognisable restaurant brands in barely a decade.

Well over a hundred restaurants across Spain, with a growing presence in other European countries.
