    Slater’s Texas-style barbecue burger: Black Canyon Angus beef with smoked bacon, Cheddar, crispy onion rings, pickles, smoky barbecue sauce and garlic aioli on a brioche bun. It follows the well-worn Western bacon formula, and the pickles are the detail that saves it from being too sweet. Tall and crunchy, so press it down before the first bite.

    Scott Slater opened the first Slater’s 50/50 in Anaheim Hills, California, around 2009 with one idea so simple it is surprising nobody had built a restaurant on it before: a burger patty made from half ground beef and half ground bacon. The bacon is not on the burger, it is the burger.
