    The Italian-accented smash burger. Two smashed beef patties with smoked scamorza, confit sun-dried tomato, rocket and basil mayonnaise. It tastes more like a pizza or a panino than an American burger, which is the joke and also why it works. Lighter than it sounds.

    Goiko started in Madrid in 2013, when Venezuelan-born Andoni Goicoechea opened a small burger restaurant built around the kind of messy, heavily loaded burgers he loved. It caught on almost immediately, spread across Spain, and became one of the country’s most recognisable restaurant brands in barely a decade.
