Surf & Turf Burger
The burger that finally merges the two halves of the name, though with prawn rather than lobster. A smashed wagyu patty topped with a crispy prawn, lemongrass hot sauce and Kewpie mayo. Sweet, crunchy and a little fiery, with a Southeast Asian accent.
The story
Surf and turf, meat and seafood on one plate, has a surprisingly long history. In the late nineteenth century lobster with steak was the fashion at grand “lobster palaces”; the craze faded by the 1920s and came back in the early 1960s, when the Eye of the Needle restaurant atop Seattle’s Space Needle featured it in 1962. The phrase itself first appears in print in the Los Angeles Times in 1961. Burger & Lobster, a chain built on exactly those two things, turns it into a burger with a wagyu smash patty and crispy prawn.

Burger & Lobster opened on Clarges Street in Mayfair in 2011, founded by Misha and Roman Zelman, Ilya Demichev and George Bukhov-Weinstein. The pitch was almost a dare: no menu and no specials board, just a choice between a burger and a whole lobster, both at the same £20 price.
