Beef & Blue

  • 910 kcal

For blue cheese people. Danish blue, bacon onion jam and garlic aioli with fresh greens and tomato. The sweet jam stops the blue cheese from overwhelming everything, and the greens keep it from feeling too heavy. One of the best-balanced signatures on the list.

The story

Blue cheese is mould, cultivated on purpose, and the most famous of them has been protected longer than most countries have existed: Roquefort was granted its caves at Roquefort-sur-Soulzon by royal charter in 1411, and the cheese can still only be ripened there. The mould gives it the salt and ammonia edge that cuts straight through fat, which is why blue cheese and beef have been paired for as long as anyone has cooked both.

About The Counter

  • United States
  • Since 2003
  • $$

Jeff Weinstein opened The Counter in Santa Monica in 2003 with one gimmick that turned out to be a very good idea: instead of a menu, you get a clipboard and a pencil. You tick your protein, cheese, toppings, sauce and bun from a checklist, and the combinations run into the millions.

Restaurants across the US, with franchises abroad. Headquartered in Culver City, California.
