Bison is Gouda

  • 960 kcal

The pun is terrible and the burger is not. Organic bison with smoked gouda, bacon onion jam, a sunny-side-up egg and spinach, finished with house thousand island. Bison is lean, so the egg yolk and gouda do a lot of work. Rich, smoky and properly messy.

The story

Gouda is named after a city that never made it. The Dutch town of Gouda held the market where farmers from the surrounding countryside brought cheese to be weighed and traded, and the name of the market became the name of the cheese — the weigh house is still standing. Smoking it is a later idea and a commercial one, but it is what makes it work next to bison, which is lean enough that the smoke has to do the job the fat normally would.

About The Counter

  • United States
  • Since 2003
  • $$

Jeff Weinstein opened The Counter in Santa Monica in 2003 with one gimmick that turned out to be a very good idea: instead of a menu, you get a clipboard and a pencil. You tick your protein, cheese, toppings, sauce and bun from a checklist, and the combinations run into the millions.

Restaurants across the US, with franchises abroad. Headquartered in Culver City, California.
