Sweet Bison Blues
Bison, blue cheese and bacon jam, which is exactly as rich as it sounds. The sweetness of the jam and caramelised onion takes the edge off the funky blue cheese, and bison stands up to all of it. It is heavy and not for everyone, but blue cheese fans rate it highly.
