Goiko’s vegetarian burger: a fully plant-based patty with Cheddar, griddled white onion, confit sun-dried tomato, fresh rocket and basil mayonnaise. The sun-dried tomato and basil give it an Italian, sandwich-shop flavour rather than an imitation of beef, and that suits it. The cheese and mayonnaise mean it is vegetarian rather than vegan.
