    Goiko’s classic-style burger, the one closest to an American diner order: beef with American cheese, griddled red onion, tomato, Batavia lettuce, pickles, Goiko barbecue sauce and Goiko mayonnaise. After the chain’s more theatrical burgers it feels almost restrained. It is a good pick for the table’s most conservative eater and a fair test of the beef.

    Goiko started in Madrid in 2013, when Venezuelan-born Andoni Goicoechea opened a small burger restaurant built around the kind of messy, heavily loaded burgers he loved. It caught on almost immediately, spread across Spain, and became one of the country’s most recognisable restaurant brands in barely a decade.

    Well over a hundred restaurants across Spain, with a growing presence in other European countries.
