A simple burger from Goiko’s menu of the day: beef with smoked scamorza, griddled white onion and Batavia lettuce. Scamorza is a southern Italian pulled-curd cheese, close to mozzarella but firmer, and smoking gives it a bacon-like note without any bacon. Cheap by Goiko standards and good for a weekday lunch.

Goiko started in Madrid in 2013, when Venezuelan-born Andoni Goicoechea opened a small burger restaurant built around the kind of messy, heavily loaded burgers he loved. It caught on almost immediately, spread across Spain, and became one of the country’s most recognisable restaurant brands in barely a decade.
