North Atlantic Cod Filet Sandwich
A nod to the Wisconsin Friday fish fry. A breaded cod fillet with lettuce and tartar sauce on a buttered bun, flaky and much more generous than the usual fast-food fish square. In the Midwest, where Friday fish is a tradition, this sandwich is a quiet bestseller.
The story
This is on the menu because of Wisconsin, not because of fast food. The Friday fish fry is a fixture across the state, rooted in the Catholic and German communities who settled it and cemented during Prohibition, when taverns needed food to keep the doors open and cheap Great Lakes fish did the job. A chain founded in Sauk City in 1984 could hardly leave it off, and the breaded cod fillet with tartar sauce is the fish fry reduced to something you can hold.

About Culver's
The Culver family opened their first restaurant in Sauk City, Wisconsin, in July 1984, in a building that had been an A&W. They built it around two things Wisconsin takes very seriously: dairy and hospitality. The frozen custard is made fresh throughout the day, the cheese curds are the real squeaky kind, and staff still bring the food to your table.
About 1,000 restaurants in 27 states, most of them in the Midwest.
