This one gets two scores, and the gap between them is the whole story. Underneath, it’s a proper burger: a beef patty with melted American cheese, a slice of tomato, an onion ring dredged twice in seasoned flour and deep fried, and a hash brown fried in the same oil until it’s golden and crunchy.
Then a whole small fish goes on top, head and tail still on, cleaned and deboned as much as you can manage, dusted in flour and fried whole. With the fish it scored 2.0. Take the fish off and the exact same burger scores 9.0. The recipe below is complete, fish included, because that’s the dish. My honest advice is to skip the last part. Without it the burger is really good.

Ingredients

  • 150 g ground beef, for the patty
  • 1 slice American cheese
  • 1 slice tomato
  • 1 burger bun
  • 1 onion, for one thick ring
  • 1 hash brown
  • 1 whole small fish, about 15 cm
  • 100 g flour
  • 1 egg
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • A pinch of cayenne
  • Salt
  • Oil, for deep frying

Recipe

    Cook the patty, melt the American cheese on top and add a slice of tomato.

    Season the flour with paprika, garlic, cayenne and salt. Beat the egg in a separate bowl.

    Cut a thick onion ring. Dredge it in the seasoned flour, dip it in the egg, then back into the flour, and deep fry it until golden.

    Fry the hash brown in the same oil until golden and crunchy.

    Clean the fish, leaving the head and tail on, and debone it as much as you can. Dust it with flour and salt and deep fry it whole.

    My advice: skip the fish. Without it this burger is really good.
