Umami Impossible Burger
A plant-based burger made with an Impossible patty and dressed like a classic: American cheese, caramelised onions, miso mustard, house spread, pickles, lettuce and tomato. The miso mustard ties it back to the umami theme, and the toppings do a good job of hiding that there is no beef.
The story
Umami Burger partnered with Impossible Foods in May 2017, when plant-based meat was still a novelty found in a handful of restaurants. Burger King’s Impossible Whopper, which took the patty into fast food, arrived only in 2019.

About Umami Burger
Adam Fleischman was an aspiring screenwriter running a wine bar when, eating a double cheeseburger at In-N-Out, he started wondering how far the savoury taste of umami could push a burger. In 2009 he spent a month blending seaweed, miso, fish sauce, soy, cheese and dried fish in his kitchen, then opened the first Umami Burger on South La Brea Avenue with $40,000.
Once more than 25 restaurants in the US and Japan. Much smaller now, with branches in Los Angeles, food halls and abroad.
