Veggie Burger

  • $4.85

A house-made veggie patty, not a bought-in one: mushrooms, black beans, brown rice and oats bound with cheese and egg. It is soft and savoury, closer to a homemade bean burger than a meat substitute. Note that it is vegetarian rather than vegan.

The story

Kathy Terry had read Fast Food Nation before the couple opened their first stand in Austin in 2005, and the whole business was a reaction to it: better ingredients, better treatment of staff, a menu short enough to do properly. The veggie burger is where that shows most plainly, because it is made in house from mushrooms, black beans, brown rice and oats rather than bought in frozen. Almost no chain of this size does that, for the obvious reason that it is harder.

About P. Terry's

  • Since 2005
  • $

Patrick and Kathy Terry opened their first burger stand on 5 July 2005 at South Lamar and Barton Springs Road in Austin, right across from a McDonald’s. The name came from a party, where a guest said “Bye, P. Terry” to tell Patrick apart from the host, who was also called Patrick. The retro building was modelled on Mack Eplen’s, an old drive-in chain from Patrick’s hometown of Abilene.

Just under forty locations, all in Texas, in Austin, San Antonio and Houston.
