A single aged beef patty with American cheese and nothing else. On a menu of loud burgers it is the quiet one, and the best way to taste the quality of the beef. Also a good order for children or for anyone with a big side of chilli fries coming.
The story
Aged beef is the one thing on this menu you cannot fake with sauce, which is why the plainest burger is the one built on it. Hanging beef in cold, moving air for weeks does two things: water leaves, so what remains tastes more concentrated, and the muscle’s own enzymes break down the connective tissue. It also costs money, because the dried crust has to be cut away and thrown out. A single patty with American cheese and nothing else is the kitchen daring you to notice the difference.
