Dick’s Deluxe
The burger Seattle means when it says “Dick’s”. Two well-done patties with cheese, lettuce, mayo and chopped pickles, and nothing else, because you cannot ask for anything else. The chopped pickles in mayo are the magic, tangy and creamy against the crisp patties. Late at night, with a bag of fries, it is close to perfect.
The story
Dick’s opened in Seattle’s Wallingford neighbourhood on 28 January 1954, selling nineteen-cent hamburgers when most burgers in town cost noticeably more. The menu stayed tiny, and the Deluxe was added in 1971: two eighth-pound patties with melted cheese, lettuce, mayonnaise and chopped pickle relish. It is the only burger on the Dick’s board with two patties, and Dick’s has marked its anniversaries by selling burgers at the original nineteen-cent price.

About Dick's Drive-In
Dick Spady and two partners opened Dick’s Drive-In in Seattle’s Wallingford neighbourhood in January 1954, and the menu has barely changed since: hamburgers, hand-cut fries and milkshakes. There are no substitutions, burgers are cooked well done, and the line moves fast because nobody is customising anything.
A dozen or so drive-ins, all around the Seattle area.
