
Buffalo Chicken
Buffalo wings rebuilt as a sandwich: a crispy chicken patty tossed in Frank’s RedHot, with bleu cheese crumbles, ranch, lettuce and tomato. The sauce is vinegary and moderately hot, and the bleu cheese and ranch cool it down, just as the dip does with wings. A smart pick for wing fans who want a proper meal.
The story
Buffalo wings are named after the city, and the best-known story puts their birth at the Anchor Bar in Buffalo, New York, in 1964, when Teressa Bellissimo deep-fried chicken wings, then usually thrown away or used for stock, and tossed them in cayenne hot sauce and butter. The details vary with the teller, and a rival claim credits John Young, who served breaded wings in Buffalo from 1961. The city declared a Chicken Wing Day in 1977, and from the 1980s the same sauce, served with celery and blue cheese dip, spread to chicken sandwiches, pizza and almost anything fried.

About Burger 21
Burger 21 comes from Tampa and from a family that already knew how to franchise a restaurant. Mark and Arlene Johnston were behind The Melting Pot, the fondue chain Mark and his brother Mike had grown from a single franchise in Tallahassee into a national brand, and in November 2009 they started a burger concept under the same management company, Front Burner Brands. The first restaurant opened in Tampa in 2010 and the first franchise deals, for Orlando, followed in 2012.
