Angus beef with American cheese, bacon, barbecue sauce and onion rings. A nod to Don Carlos Edwards’s barbecue beginnings, though the chain does not say so. Smoky, sweet and crunchy, with no salad in the way. The onion rings are the same ones served as a side, made from sweet Spanish onions, and they are among the best things on the menu.

Arctic Circle began as a refreshment stand that Don Carlos Edwards set up at Utah’s Pioneer Day celebrations in 1924. By the early 1940s he had a barbecue restaurant in Salt Lake City, and in 1950 he opened the first Arctic Circle there. At its peak the chain had 308 restaurants across the West; today it has around seventy in eight states, still headquartered in Utah.

About seventy restaurants in Utah, Idaho, Nevada, Oregon, Washington, Montana, Arizona and Wyoming, roughly half of them in Utah.
