Sriracha Burger

    Sriracha five ways. The 50/50 beef-and-bacon patty is spiced with it, then topped with Sriracha bacon, pepper Jack, Sriracha mushrooms, Sriracha slaw, charred yellow onion and Sriracha mayo on a brioche bun, with more Sriracha on the side. It is more garlicky and sweet than truly fiery. Order it if you love the sauce; skip it if you are already tired of it.

    The story

    Sriracha is named after Si Racha, a coastal district of Thailand where commercial production of the chilli sauce began in the 1930s; the Sriraja Panich brand, sold from 1935, made it famous. The bottle most Americans know is different: Huy Fong Foods created its version in Los Angeles in the early 1980s for Vietnamese phở restaurants, and the rooster on the label gave it the nickname “rooster sauce”. When a chilli shortage stopped Huy Fong’s production in 2022, bottles sold for $30 or more. Slater’s builds a whole burger around the sauce.

    Scott Slater opened the first Slater’s 50/50 in Anaheim Hills, California, around 2009 with one idea so simple it is surprising nobody had built a restaurant on it before: a burger patty made from half ground beef and half ground bacon. The bacon is not on the burger, it is the burger.
