Hanwoo Bulgogi Burger

The upmarket bulgogi burger, made with hanwoo, Korea’s prized native beef. It is richer and more tender than the standard version, with the same sweet bulgogi glaze. A pricier order that shows how seriously Korean diners take their beef, even at a fast-food counter.

    The story

Hanwoo is Korea’s native cattle breed, raised on the peninsula for centuries as a working animal before it was ever bred for eating, and now protected and graded the way wagyu is in Japan. It is expensive enough that a hanwoo burger is a statement rather than a menu staple. Putting it under bulgogi sauce is a very Korean piece of logic: the country’s best beef, cooked in the country’s best-known marinade, sold at a chain that built its business on beating McDonald’s at being local.
