Freshness Burger

Garlic Shrimp Burger

A seafood burger built around plump garlic shrimp with a rich tartar sauce and a tangy marinated red cabbage for contrast. It is bouncy, garlicky and bright, a very different thing from a breaded shrimp patty. A good pick for anyone who does not want beef.

    The story

Garlic shrimp is Hawaiian in the way most Japanese diners mean it: the shrimp trucks parked along the North Shore of Oahu, which have sold prawns in garlic butter out of converted vans since the 1990s and turned a snack into something tourists plan a drive around. Japan took to Hawaii as a holiday idea harder than almost anywhere, and a Tokyo burger café putting garlic shrimp in a bun is selling that association as much as the seafood.

    About Freshness Burger

    • Japan
    • Since 1992
    • $$

The first Freshness Burger opened in December 1992 in Tomigaya, a quiet corner of Shibuya in Tokyo. It was pitched as the opposite of a noisy fast-food counter: a burger café where adults could sit down and relax over a coffee, which is still how the company describes itself.

Around two hundred restaurants, almost all in Japan.
