T-Bird

    The spicy fried chicken burger: crispy fried chicken dusted with Rum and Que’s Dirty Bird Nashville seasoning, sliced jalapeños, salad and chipotle aioli. The Nashville spice gives a dry, peppery heat and the jalapeños add a fresher one, so it builds rather than burns. Hotter than most of the menu, but not a challenge burger.

    The story

    The T-Bird’s seasoning comes from Nashville hot chicken, a dish with a famous origin story. Thornton Prince, the story goes, was served fried chicken loaded with extra pepper by a girlfriend tired of his late nights, liked it, and by the mid-1930s was selling his own version with his brothers in Nashville. Prince’s Hot Chicken Shack, run by his great-niece André Prince Jeffries since 1980, keeps the tradition going. KFC took Nashville Hot national in the US in 2016, and the style has since travelled far beyond Tennessee; BurgerFuel uses a Nashville rub from Rum and Que.
