Chicken Maharaja Mac
India’s Big Mac, built for a country where McDonald’s serves neither beef nor pork. The double-decker bun holds two flame-grilled chicken patties with iceberg lettuce, shredded onion, jalapeños, tomato, a slice of cheese and a habanero sauce. It is taller and spicier than the original, and at 296 g one of the heaviest things on the Indian menu.
The story
When McDonald’s opened in India in 1996, it could not sell the Big Mac as it was: beef is off the table for most of the country and pork for much of the rest. The Maharaja Mac, named after the Hindi word for a great king, first used lamb patties; the chain later moved it, and the rest of the Indian menu, to chicken, and added a vegetarian Maharaja Mac alongside it.
