The indulgent one. A beef patty with black truffle mayo, sweet onion jam, Parmesan and double American cheese. The truffle is loud, the onion jam sweet and the double cheese melts through everything. It is a rich, grown-up burger that does not pretend to be subtle.
The story
Worth knowing before you order anything with truffle on it anywhere: most of what tastes like truffle in a restaurant is not truffle. Truffle oil is usually a neutral oil flavoured with 2,4-dithiapentane, a compound made in a laboratory, because real truffle loses its aroma within days and never survives heat. That is not automatically a swindle — the synthetic version is a real and powerful smell — but it is why a truffle burger can exist at this price and a fresh black truffle cannot.
