About Briochef

Briochef was founded in Madrid in 2020 by a burger lover with a taste for culinary crossovers, and the idea is still written on its menu: burgers that mix traditional and exotic flavours from cuisines around the world. It grew to four restaurants by 2024, when it opened in Chamberí, alongside branches at Príncipe Pío and in Alcalá de Henares.

The awards came quickly. Its burgers have been named the best in the Community of Madrid and the third best in Spain, it has won Madrid’s Burger Showdown, and the international ranking The World’s Best Burgers placed it 17th in the world and then 15th in 2026, noting that it has been crowned Madrid’s best burger joint more than once.

Every burger is built on dry-aged Rubia Gallega beef, the prized Galician breed, in a soft house brioche, cooked rare, medium or well done as you choose. Any burger can be turned into a smash burger or made with a vegetable patty. The menu travels widely, from Italian burrata and pesto to Latin American chilli sauces and a 100-day-aged beef burger with Japanese A5 wagyu.
