Wrocław’s food-truck burger brand turned Polish chain, with freshly ground beef and cheeky names.
About Pasibus
Pasibus began as a food truck in Wrocław. Dawid Bojarojć developed the first recipes, with help from Piotr Arasymowicz, and was joined by Piotr Staszczyński and Jan Kulisiewicz; on 21 August 2013 they served their first burgers from a truck nicknamed Pasibus Dziadzio, “Grandpa”. More trucks followed, including an eight-metre one for big events, and the first restaurant, Przystanek Pasibus (“Pasibus stop”), opened in February 2015.
In 2015 Pasibus won the Polish burger championship held at the National Stadium in Warsaw, and its central kitchen in Wrocław, the “depot”, began preparing everything the restaurants serve. In 2019 the media group Agora invested in the brand, and it has grown to more than thirty restaurants in cities such as Warsaw, Łódź, Katowice, Lublin, Gdynia and Bydgoszcz.
The burgers use freshly ground beef, now 160 grams a patty, on sesame or butter buns, and the names are playful Polish: Klasyk, Bebek, Włoski Pastuch (“Italian shepherd”) and Awokadus. There are also fried-cheese, chicken and vegetarian burgers, a new burger of the month since 2015 and a breakfast menu.
