About
Bob's hundred-thousandth burger, made in memory of Moolissa, the cow parked outside the restaurant for most of the episode. The joke is that the milestone burger has no meat in it whatsoever, and that is the whole point of the recipe: black-eyed peas, green peas and minced mushrooms, bound with egg and panko.
Two details decide whether it survives the pan. Pulse the peas until they are roughly chopped and no further, because a puree has nothing to hold on to. Then let the shaped patties rest at least ten minutes so the panko can absorb the liquid. Cook them straight away and they fall apart the moment you try to turn them.
Ingredients
0 / 15

Recipe
- 1Pulse both kinds of peas in a blender until roughly chopped. Do not puree them.
- 2Fry the diced onion in butter until translucent and let it cool slightly.
- 3Combine the peas, onion, mushrooms, egg, onion powder and hot sauce. Season, then add panko until the mixture holds together but is still moist.
- 4Shape four patties and rest them for at least 10 minutes so the panko absorbs the liquid. Skip this and they fall apart in the pan.
- 5Cook them as you would a beef burger.
- 6Build it: bun, lettuce, patty, tomato, onion rings, top bun.
